Whew! this week has gone by so quickly. I feel like I looked up and it’s Friday. Tomorrow I shop for the freezer cooking that I am doing on Tuesday with three other women. We are only attempting half of what I normally do to make sure everyone enjoys it and wants to do it again. We chose to make italian beef sandwiches, chalupa grande, pork tenderloin, baked ziti, chicken fajitas, chicken tortilla soup, peachy ribs, and chicken marinade. We make each recipe twice for each person in the group, so this time around we each will go home with 16 meals. That should last me 2 months. We end up using two to three a week. There is enough in each recipe to have leftovers the next night, so we typically use them on Monday and Thursday and eat at church on Wednesday and Sunday nights. All of this comes from the book 30 Day Gourmet. The task always feels big on this side of the cooking, but it is so fun on the other side of cooking day when you have a freezer full of good meals!
