Tonight we had chicken fajitas for dinner from our freezer recipes. I wanted to share the marinade with you in case you wanted to cook it too!
Put in a blender: 1/2 cup olive oil, 1/3 cup soy sauce, 4 scallions, 2 large garlic cloves, 1/4 cup lime juice, 1/2 teaspoon cumin, and 3 Tablespoons dark brown sugar. Pour marinade over 1.5 pounds of sliced chicken. We freeze it at this point.
When you are ready to cook it, thaw it. Sautee red bell pepper, green bell pepper, and onions in a pan. I baked the chicken in the oven for 15-20 minutes and then added it to the peppers and onion mix in the pan. Wrap in tortillas and serve with cheese, sour cream, salsa, and lettuce.
This was originally supposed to be with skirt steak instead of chicken. Either works great. Enjoy!
