Here is another freezer meal and I am planning on making these for our youth group fellowship that we are hosting the 24th of October.  The ingredients are: 2-2.5 lbs for cooked ground beef, 16 oz of salsa, 16 oz of refried beans, 1 package of taco seasoning, 16 flour tortillas (8″), and 4 cups of shredded cheese.

In a pan, combine the beef, salsa, beans, and taco seasoning.  Cook and stir over medium heat until heated through.  On a tortilla, put a half cup of meat mixture and top with shredded cheese.  Fold in the sides and then roll it up.  We wrapped each chimichanga in aluminum foil and place 6-7 in a freezer bag.  Seal and freeze.

To eat: Pull out the number of chimichangas you would like to cook.  Let them thaw- still wrapped in the foil.  Bake at 350 degrees for 30 minutes.  I finish them by heating oil in a frying pan, unwrapping the chimichanga and frying them on each side.  They can be served with sour cream. 

I plan on heating tons for the youth group.  I may need my official freezer cooking team to help me prepare, roll, and wrap my chimichangas~ Any volunteers? 🙂
